The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Place the listed items in a pan, heat until it reaches a light boil, mixing so the sugar melts. Then, remove from the heat allowing it to cool fully. Pour into an sealable bottle, cap it keeping it chilled, it can be stored for about a month.

For the Cocktail Base: Combine all the liquid ingredients into a large bottle, allow it to infuse for an hour, then pass it through preferably using cheesecloth, so it's completely strained.

To serve: Add 85ml of your premix to a mixing glass packed with ice, and stir carefully for one minute to cool it down. Filter to a chilled martini glass or equivalent, top with the cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
